Production Description:
An water spray retort autoclave is a pressure chamber used to carry out industrial processes requiring elevated temperature and pressure different from ambient air pressure. The autoclave is designed for cooking, sterilization and pasteurization of food in containers using a temperature probe placed on a product sample. This allows a perfect control of the entire process while preserving the products’ properties and minimizing possible changes in the nutritional characteristics of the final product.

Working Principle:
Steam is directly injected in the bottom of the retort for fast and uniform come-up. Water sprays running over the entire shell length intensely mix the steam and water and create a homogeneous temperature distribution that results in a uniform process throughout the retort. Indirect, sterile cooling via a plate heat exchanger saves water and eliminates the need for water treatment chemicals.
