Thermal processing is a key stage in the industrialization of beans processing because this is the stage where cooking and sterilization of the product occurs, thus deactivating the microorganisms and guaranteeing alimentary safety. Our autoclave is very popular, which applies liquid water, steam water or a mixture of these two in its operation, providing heat transfer to the inside of the product. The packages coming out of the seaming machine are conditioned in the autoclave, and then closed. The temperature of the process ranges between 110ºC-135ºC, which may depend on the heating environment, and the applied pressure is typically 1.04×105Pa, that is, 1.06kgf cm-2.
