Fruit leather, also called a fruit bar or a fruit slab, is a dehydrated fruit-based confectionery dietary product which is often eaten as snack or dessert. It is chewy and flavorful, naturally low in fat and high in fiber and carbohydrates; it is also lightweight and easily stored and packed. Consuming fruit leather is an economic and convenient value-added substitute for natural fruits as a source of various nutritional elements.

Processing flow:

Most fruit leathers were prepared by sorting, washing, peeling, and seed removing,and then cutting into slices which can be pureed or pulped easily. Purees are heated, boiled, or blanched in a water bath in order to inactivate the enzymes. Additives such as sugar, pectin, acid, glucose syrup, and color are often added before or during blending. These ingredients are mixed with the fruit puree to make fruit leathers with a higher quality, longer storage, or better organoleptic quality than the original fruit. Most fruit leathers are dried at 30 to 80∘C, especially at 50 to 60∘C for up to 24 hours or until they have reached the final moisture content of 12–20% (w.b.).

1.Vacuum evaporation tank

Description of the fruit leather processing line and the working principle:

The fruit scraping machine comprises a scraping platform that is provided with a tray supporting plate that can move up and down reciprocating and a scraper that can move back and forth along the supporting plate.And the scraping platform is provided with a hopper, the hopper is connected with a storage tank(supplied by customer).

The control system comprises a controller, a scraper position sensor for detecting the position of the scraper and a feeding control device for controlling the puree feeding . The controller is electrically connected with the position sensor of the scraper and the feeding control device respectively. The scraper position signal transmitted by the scraper position sensor can be recorded and verified by the controller, and the feeding can be controlled by blade movement times.

Description of the machine and the working principle

This drying room system uses high-temperature hot water (95°C) produced by a hot water boiler to heat the air inside the drying room through a 304 stainless steel high-efficiency heat exchanger. Under the drive of a circulating fan, the internal moisture of the material evaporates continuously. And the hot and humid air in the drying room is discharged into the outside air through the dehumidifying fan until the material reaches the drying requirement.
