Brix noun introduction
Brix is a unit of solution concentration specifically used to describe the amount of soluble solids in fruits, vegetables and other foods.Brix was originally invented by Austrian chemist Adolf Brix in the late 19th century to measure the sugar concentration in grape juice. Later, it was gradually expanded to measure other types of solutions, including fruit juices, honey, syrups, etc. The Brix value is basically a ratio that represents the percentage of soluble solids in the total volume of the solution.

Similar to brix, there are two key words, one is "sweetness" and one is "sugar".
Sweetness
Sweetness is a sensory value determined by the human senses, and the molecular weight of sugar is basically not much related, according to the different types of sugar, there will be a big difference.
Sugar
Sugar degree, refers to the concentration of sugar dissolved in water, can be measured and analyzed to know the value, directly affect the physical properties of food, is one of the important factors to judge the quality of food.
Brix
Brix% refers to a unit value measured using a refractometer (also known as a saccharometer) and is generally considered to be roughly the same as a saccharometer. Since the refractometer is designed using the principle that "as the concentration of solute in an aqueous solution increases, its refractive index will also increase", the water-soluble raw materials will affect the final result.
